Is it possible to show the last traded volume (say in the last 30 seconds) as the actual amount placed in the market.
E.g. BA highlights £10,000 has been placed in the market on the fav in the last 30 seconds?

Yes, you can use a 'Set/Modify Stored Value' rule to do this,
There are plenty examples in the customization area for your one-click and ladder trading screens which use a rules file to store the value of something, then pass that value to be displayed on your trading screen, so you'll probably find several examples among those that just need a quick edit to the actual value it stores
